Storage: Tomatillos are best stored in their paper husks. They can be kept in the refrigerator or, shorter-term, on the counter.

Uses:  Tomatillos should be peeled to remove the husk, then boiled or roasted prior to using. This breaks down the waxy skin. Broiling tomatillos will give them brown spots, which imparts a smoky flavor to sauces made with them. Tomatillos can also be sliced raw into salads for a lemony burst of flavor.
