Storage: Store all pea types in a storage bag in the crisper of the refrigerator. Sugars in peas will turn to starch with long storage, so eat quickly! Peas can be frozen after blanching (see Beans for technique).

Uses: To use peas, snap off stem end and pull end toward tail end to remove any string (mostly only found in Sugar snap peas). All the peas we grow have edible pods. They are delicious raw or lightly steamed until bright green. Peas should always be crisp when properly cooked. Peas pair well with mint, carrots and hazelnuts.
