Storage: Like all tender greens, arugula stores best cleaned and dried. After rinsing arugula leaves, dry in a salad spinner or wrap in paper towel. Store in the fridge in a bag that minimizes further drying out.
Uses: Arugula can be used raw in salads or cooked like spinach. A quick wilting of the leaves will mellow the arugula flavor. We like the combination of spicy arugula and sweet, earthy beets.
